Broiled Chicken

For my meal for the conference, I came up with this marinade and for chicken and then broiled it. I tried to make it very mild so it would not overwhelm the spicy peanut sauce.

1/2 cup 7-up
1 tbsp soy sauce
1/4 cup oil (I prefer olive oil)
1/2 lime, juiced
1/4 tsp onion powder
1/8 tsp pepper
1/4 tsp garlic salt
4 to 5 chicken tenders or 1 chicken breast

Mix all the ingredients for the marinade well. Add the chicken. Let sit for 15 to 20 minutes. You can put in the fridge for 1 to 2 hours if you want a deeper flavor.

Take the chicken out of the marinade. Place on a cooling rack that has been placed on top of a cookie sheet. Place under broiler for 8 to 10 minutes. Turn over and cook for another 8 to 10 minutes or until chicken reaches 165 degrees internally.

Serve with the peanut dipping sauce, or other sauce of your choice.

Spice Peanut Dipping Sauce

1/2 cup creamy peanut butter
1/4 cup hot water
2 tbsp juice from 1 lime
2 tbsp Asian chili sauce
1 tbsp soy sauce
1 tbsp brown sugar
2 scallions, sliced thin
1 medium garlic clove, minced fine
2 tbsp coconut milk

Whisk the peanut butter and hot water together in a small bowl until smooth. Stir in the remaining ingredients.
